My Aeonium 'Kiwi' is making aerial roots that are growing down into the growing medium, 2 parts Bonsai Jack, 1part cactus mix. What does this indicate? I hope it's good.

Typically, aerial roots mean the plant is looking for more water. Underwatering is certainly better than overwatering but it will grow faster if you water it a bit more frequently.
