I live in Zone 7 and want to plant in May. Do I need to plant indoors and keep under grow light?

You should get all of your outdoor planting done a month before the first frost of the year. If you've already had your first frost, you can plant your Sempervivum indoors under a grow light for the winter. Just be careful not to over water while they're indoors and they'll root just fine.
