Why do they stretch out, even when in a sunny window?

This happens when a window isn't sunny enough. Cacti require lots of direct sun otherwise they will stretch for light. You could move it closer to a sunnier window, and/or supplement with a grow light. When there is no risk of frost, you can also move it outdoors to get full sun, unfiltered by windows.
