Yes. That does sound like it would work. Just be sure to only place the pots in the garage when it gets consistently below freezing. This will ensure that the plant is in dormancy before it gets placed in the dark. Also, because of the low light environment, rot may be more of an issue. Be sure the plants stay dry and cold during their time in the garage. A dusting of cinnamon powder could help with this as cinnamon is a natural fungicide.
