Hello there!
I would recommend cactus plants as rabbit and squirrel resistant. They flower with large petals and the spines would make any critter think twice about eating them! For a specific recommendation, I would recommend, perhaps ironically, Opuntia microdasys var. pallida 'Bunny Ears'. I would also, specifically recommend Echinopsis spachiana - Torch Cactus. That name is also a link.
As far as non-cactus succulents are concerned, I would recommend Echeveria agavoidies. This one is a little more hardy than most Echeveria, is critter resistant and grows stalks with many pink and yellow flowers.
One more thing, although Agave plants only flower once in their whole lives, these flowers are beautiful and grow on a most impressive stalk. An especially gorgeous one is Agave chrysantha. They also are very critter resistant for much of the same reason the cacti were. Squirrels and rabbits don't like eating spines. I hope all of this helps!
