Hens and Chicks need rapidly draining soil so that their roots can dry out between waterings. Using very gritty soil and planting in raised beds can help with this, but you can also plant them in containers with drainage holes. The great thing about container plantings is that they can be pulled under an awning for the rainy season. You might also have a lot of luck with Sedum in your climate!
