What if any mulch do you recommend for hens & chicks over winter in the midwest?

The trouble with most mulch is that it holds too much water around the Sempervivum, encouraging rot. A rocky mulch / top dressing however is a good choice. As long as your minimum temperatures stay above about -20F and you can keep your Sempervivum relatively dry by not watering and growing them in rapidly draining soil, they can overwinter just fine, even with unpredictable snow cover.
