I was told to let me succulent stem get a callus b4 planting & grow better at Christmas time....I live in Texad. What's callus mean??

Callus is a type of tissue plants make when they get wounded. They use it to fill in holes and prevent fungus from getting inside the plant long term. When you make a cutting, you're wounding the plant, which opens it up to fungal attack. Allowing the cutting to develop callus over its wounded end, before planting it in soil, will allow it to protect itself from such attacks.
Cuttings take roughly 3-5 days to form this callus.
Actually, Echeveria tend to slow down their growth in the winter.
