How can I ensure this will grow in a spiral like in photo 3?
Cereus forbesii 'Spiralis' [small] [limited]
The third photo shows it as a really cool spiral, but other photos have plants with little or no spiraling at all. Why is this, and can the plant be coaxed to spiral like the one in the photo?

Young plants don't have the spiraling as that develops in maturity. This particular variety will ship to you in a 2" pot and will only stand about 2" high at first. The third photo is a more mature specimen to show you what the plant will grow into. It may take a couple of years for the spiral to occur.
To ensure the plant spirals like you want it to, be sure to give it plenty of sun and water sparingly. Be sure the soil is well draining and plant it in a pot that has a drainage hole. In short, with proper care, your plant will spiral.
