I have a long growth coming out from middle of a Sempervivum. What is that?

That is the beginning stages of a bloom. Once the flowers open and begin to dry, the whole rosette will start to die. However, any offsets (a.k.a. chicks) coming off the rosette won't die. They'll root and continue to grow.
