Which ones do gophers NOT eat?
Sempervivum 'Flammenschwert'
I noticed some of my succulents have disappeared because of hungry gophers while others have remained. Are there any succulents that gophers won't eat? I am not going to kill any gophers I just want to plant thing they won't eat.

An established patch of Sedum should remain untouched. Sempervivum may get nibbled on but, once the gophers realize its bad taste, they should leave it alone. However, the fact that they ate any succulents (which I'm assuming consisted of some Sedum and Sempervivum) suggests that desperation could be involved.
If the issue persists, cayenne pepper can be a natural deterrent for many larger pests like deer and rodents.
