Echeveria stretch tall like that when they aren't getting enough sunlight. It takes a whole lot of bright light, such as a south-facing window sill or a grow light like these, for an Echeveria to maintain compact growth and vibrant colors indoors. There is no way to reverse the stretching, but you can "restart" your plant by taking a cutting from the top and re-rooting it in a sunnier location.
