It's possible they're drying up from not getting a deep enough soaking. But we have also seen moisture meters cause people to water their succulents too frequently. Even if a moisture meter reads dry, it's best to wait to water until the leaves show signs of thirst. Yellowing can also be a sign that a succulent is not getting enough sunlight.
