If you know for a fact that your winters get colder than your plants are hardy, then it depends on how much more cold it gets outside.
If it gets only 10°F colder than your plants are hardy to, then you could probably get away with draping a sheet over your plants and/or growing them next to your house so they can catch the minuscule amount of heat that escapes through your insulation.
If it gets much colder than that, it may be time to look for hardier plants instead.
