I believe you'll need 4-5 gallons of soil.
To find this out, I cubed 2.5 inches (2.5 X 2.5 X 2.5) to get 15.625 inches cubed (an overestimate of the volume of a 2.5" pot, excluding the space the roots take up). That volume of soil for 70 pots works out to 15.625 X 70 = 1,093.75 inches cubed of soil. That's the same as 4.73 gallons.
I just wanted to outline my steps in case you wanted to check my math, or redo the calculations for 60 pots instead of 70. In any case, I hope this helps and congratulations on the wedding!
