All Sempervivum are considered deer resistant, because they're just not appetizing to animals. However, the thing about deer is, they're tenacious. They may take an exploratory bite or they might uproot any freshly planted plant. So keep a close eye on your succulents when you first plant them. Eventually, the deer will learn, but there might be some mornings where you need to be replant.
