my plant is growing and needs to be cut back. where on the stem does one cut?

First, it's important to be sure the plant is not reaching for light. This is a common reason plants get top heavy and fall over when they're not supposed to. If the plant is reaching for light, that problem will need to be fixed before any cutting is done. Otherwise, the plant may not have the energy for new branches. If your plant is healthy and just needs to be pruned back, where you cut along the stem is of little consequence. Just be sure to leave a few pairs of leaves on it so it can continue to photosynthesize.
