There seems to be quite a lot of variation in your Astrophytum ornatum varieties. What's the difference?

Part of the difference is due to age. Young Astrophytum ornatum tend to have few spines and lots of white hair between the ribs. Eventually, they grow more spines and lose some of the hair. Once mature, the plant will begin to elongate. There is also a lot of natural variation in appearance within this species.
