It depends. During the growing season their soil should be fully drenched then allowed to completely dry out. Since they are outdoor plants, how long it takes the soil to dry depends heavily on the weather, airflow, and sun exposure as well as the grittiness of the soil. To assess if it's ready for water, feel the soil to see if it's dry down to a depth of about 3" and feel the leaves to see if they're less turgid than usual. Eventually, you'll get a sense for how often to water in different seasons in your climate.
As a very general example, the in-ground Sempervivum in our climate need drenching about every other week in spring and fall, about once a week through our hot, dry summers, and nothing at all through winter. But your frequency will vary.
