Cresting and variegation are two different somatic mutations that can occur in plants.
A crested plant has to do with form. The tip of the stem, where much of plant growth occurs, becomes damaged and begins to elongate horizontally. The result is a plant, like our crested E. A variegated plant has more to do with color. Either chlorophyll, the pigment responsible for the green color of plants, stops being produced in part, or all, of the plant or, chlorophyll gets masked by another pigment.
