Yes, when you prune the top of a succulent, the remaining stem can sometimes produce new offsets for propagation.
It's important to note that if you're pruning to counter stretching caused by lack of light, you also need to deal with the light issues. Pruning can go wrong if the cuttings lack the energy to root. That being said, just use a clean knife to cut the top 2"+ off the plant and then treat that like any other succulent cutting.
