We have a few recommendations, although we don't recommend glass terrariums as a whole because they tend to not have drainage holes and, if they're closed, the humidity gets too high for cacti. It's certainly not impossible to grow them in terrariums, but there are a lot of challenges to doing so.
1) Peanut cactus. It's easy to trim this one back and it doesn't get too tall. Although cacti tend to grow very slowly, many of them will outgrow your tank eventually, even if it takes many years. Peanut cactus also produces gorgeous flowers.
2) Powder puff cactus. This one also stays small and it's really pretty with it's silvery hair. Although it's flowers aren't as big as peanut cactus' flowers are, they're a nice peachy color and they look like the cactus is wearing a little crown.
3) Echinobivia 'Rainbow Bursts'. This one is pretty big but tends to stay under 10". Although it, in and of itself, is an attractive cactus, I recommend it mostly for its flowers. They're like something out of a dream. Our description describes them as "giant pink flowers" but that doesn't even begin to describe them properly. They're like a neon hot pink. I've seen these flowers with my own eyes and it's still difficult to believe they are the color that they clearly are.
Also, be sure you're using a gritty, well-draining soil, giving your cacti lots of sunshine, and watering minimally. Good luck!
