A rosette is actually a type of plant shape, rather than a particular genus of plant. Dandelions, for instance, are rosette plants. Cabbage are rosette plants too. A rosette is defined as a circular arrangement of leaves on a short stem, where the internodes (the space between the leaves on a stem) do not elongate as the plant grows.
Sempervivum and Echeveria are both rosette plants and so are a lot of Echeveria hybrids (like Graptoveria and Pachyveria). Mostly, this tray will contain only Sempervivum and Echeveria, but there's always a chance you'll get something from a different genus too.
