First of all, congratulations on your wedding!
All in all, I think these plants would work for this purpose very well but, that's going to depend on your preference. I'm assuming, because the plants are for a single event, that you'd want to plant them close together in the logs to achieve the "filled in" look right away. These plants in the Summer Special Tray are in 2" pots and they'll be roughly that width by 2"-4" tall. All of that considered, you can plant 16 of these plants, per log.
I'm not sure how many logs you have, but, since these trays contain 50 plants, you can plant 6 logs per tray of plants and have a few plants left over for fun!
I don't think you need to bother with larger plants, but if you think you might want to, I'd recommend the aptly named Epic Succulent Sampler; where the plants are in 3.5" pots and will be roughly 2"-6" tall and 3"-5" wide. Again, I wouldn't worry about it, but if you want larger plants too, there they are!
