It can stretch, but it's not suppose to. Stretching occurs when a plant is not receiving enough light. In a panic, it tries to get above what, it believes, is casting a shadow on it.
When growing succulents indoors, it can be difficult to give them enough light. If you have a south facing window that isn't shaded by trees or other buildings, this could be an ideal spot for them. Otherwise, you may have to invest in a small grow light to supplement their light intake.
Pachyveria 'Yvonne' specifically can grow a stem regardless of light conditions, but this differs from etiolation in that the stem will still be masked by the many leaves. This stem never gets very long. I hope this helps!
