Why are the house finches eating my sedum?

finches are eating the leaves. Are they after water?

Interesting! I believe you're right. Small birds have been known to eat succulent leaves for the water. I've never heard of the damage being extensive enough to kill the plant though. If they really start damaging your Sedum, you could try bird netting or flash tape.
