Hi there!
Some Agave can be eaten, like Agave havardiana, but some, like Agave americana, are very toxic. They're hit and miss.
That being said, I haven't found any sources that directly say that Agave 'Blue Emperor' is toxic. However, I haven't found any that say it can be eaten either. I wouldn't recommend trying it just in case.
A lot of Agave plants bear the name "century plant" because they can live a long time. This is certainly true, Agave can live a long time, including 'Blue Emperor', but whether they live to be 100 years old or not depends on how well they're cared for and the conditions they're grown in. For example, if they flower after only 20 years then they'll die regardless. Flowering is fatal to an Agave.
